Vinification
Gentle crushing immediately after the harvest is followed by fermentation in stainless steel tanks. The wine is then combined with the lees from raking of the Amarone and Recioto. This age old technique called "Ripasso" is normally carried out in March. Aging in 7 Hl barrels made of Slovenian oak and French barrique for 10 months, followed by aging in the bottle for about 6 months.

Characteristics
Color: Ruby Red color
Aroma: Intense fruity notes of black cherry, plum, herbs with toasted notes and tobacco.
Taste: Full rich and velvety, with well expressed tannins. Harmonious and balanced flavor with a long lasting persistence.

Best with
Mushroom or meat risotto, roasts, meats grilled over an open fire and game.
